做(zuò )法:春笋切(qiē )成(chéng )片后加少(shǎo )许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春(chūn )笋,盖上锅(guō )盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅(guō )盖焖。
