做法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧(shāo )热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上(shàng )锅盖焖。
