做法:春(chūn )笋切(qiē )成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
