做(zuò )法(fǎ ):春笋切(qiē )成片后加(jiā )少许盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅盖焖。
