做法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水(shuǐ )快(kuài )熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
