做法:春笋(sǔn )切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上(shàng )锅盖(gài )焖。
