做法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖(gài )大火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖。
