做法(fǎ ):春笋切成(chéng )片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生(shēng )姜切片(piàn ),葱(cōng )切(qiē )成段(duàn )。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀(yún ),加入(rù )少量清水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
