做法:春(chūn )笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均(jun1 )匀,加入(rù )少量清(qīng )水半掩住春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐,翻(fān )炒均(jun1 )匀稍收汁时盖上(shàng )锅盖焖(mèn )。
