做法:春笋切(qiē )成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入(rù )生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住(zhù )春(chūn )笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒(chǎo )均(jun1 )匀(yún )稍收汁时盖上(shàng )锅盖焖。
