做法:春(chūn )笋切成(chéng )片(piàn )后加少许盐捞出后用清水浸泡(pào ),生姜切(qiē )片,葱切成(chéng )段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量(liàng )清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
