做法(fǎ ):春(chūn )笋切成片后加(jiā )少许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮开(kāi )后转(zhuǎn )中(zhōng )火。煮到水(shuǐ )快(kuài )熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
