做(zuò )法:春笋(sǔn )切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后(hòu )转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
