做法:春笋(sǔn )切成(chéng )片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧(shāo )热(rè ),倒入2勺(sháo )油(yóu ),放入生姜、春(chūn )笋、牛(niú )肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
