做法:春(chūn )笋切成片后(hòu )加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切(qiē )成段(duàn )。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝(háo )油翻炒(chǎo )均匀,加入少(shǎo )量(liàng )清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅盖(gài )焖。
