做法:春笋切(qiē )成片(piàn )后加少许(xǔ )盐捞(lāo )出(chū )后用(yòng )清(qīng )水(shuǐ )浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到(dào )水快(kuài )熬干的时候加(jiā )入(rù )盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
