做(zuò )法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒(chǎo )1分(fèn )钟左(zuǒ )右(yòu )。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春(chūn )笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
