做法:春笋切(qiē )成片后(hòu )加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少(shǎo )量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后(hòu )转中火。煮(zhǔ )到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖(mèn )。
