做(zuò )法:春笋切成片后(hòu )加少许(xǔ )盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春(chūn )笋(sǔn ),盖上锅(guō )盖大(dà )火(huǒ )煮开后(hòu )转(zhuǎn )中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖(gài )焖。
