做法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅(guō )烧热,倒入2勺油(yóu ),放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水(shuǐ )半掩住春(chūn )笋(sǔn ),盖(gài )上锅盖大(dà )火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
