做法:春笋切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生(shēng )姜(jiāng )切片,葱(cōng )切成(chéng )段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到(dào )水快熬干(gàn )的时候加入(rù )盐,翻炒(chǎo )均匀(yún )稍收汁(zhī )时盖上(shàng )锅盖焖。
