做法(fǎ ):春笋切成片(piàn )后(hòu )加(jiā )少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切(qiē )成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖上锅盖焖。
