做法:春笋切成片(piàn )后加少许盐捞(lāo )出后用(yòng )清水浸泡,生姜切(qiē )片,葱切(qiē )成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
