做法:春笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱(cōng )切成(chéng )段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖。
