做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再(zài )加入生抽、老(lǎo )抽(chōu )、蚝油(yóu )翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖(mèn )。
