做法:春笋切成片后加少许盐捞(lāo )出后(hòu )用(yòng )清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住(zhù )春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
