做法(fǎ ):春笋切成片后(hòu )加少许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱(cōng )切成段(duàn )。锅烧(shāo )热(rè ),倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖(gài )大火(huǒ )煮开后转中火。煮到水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖(gài )焖。
