做法(fǎ ):春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中(zhōng )火。煮到(dào )水快(kuài )熬干的时候加(jiā )入盐(yán ),翻炒均匀(yún )稍(shāo )收汁时盖上(shàng )锅盖(gài )焖。
