做(zuò )法:春笋切成片后加少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火(huǒ )。煮到水快熬干的时候加(jiā )入(rù )盐,翻(fān )炒均(jun1 )匀(yún )稍收汁(zhī )时盖上锅盖焖。
