做法:春笋切(qiē )成(chéng )片后加少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮(zhǔ )开(kāi )后转(zhuǎn )中(zhōng )火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖(gài )焖。
