做法:春笋切(qiē )成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉(ròu )片、葱段(duàn )翻(fān )炒1分钟左右。再(zài )加入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后(hòu )转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
