做法:春笋(sǔn )切(qiē )成片后加少许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的(de )时候加入盐,翻(fān )炒(chǎo )均匀稍收(shōu )汁时盖上锅(guō )盖焖(mèn )。
