做法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉(ròu )片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时(shí )盖(gài )上锅盖焖。
