做法:春笋切成(chéng )片(piàn )后加(jiā )少许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切(qiē )片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放(fàng )入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少量清(qīng )水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖(mèn )。
