做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转中火(huǒ )。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖。
