做法:春笋切成片后加少许(xǔ )盐捞出(chū )后(hòu )用清水浸(jìn )泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮(zhǔ )开后转(zhuǎn )中(zhōng )火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
