做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁(zhī )时(shí )盖上锅盖(gài )焖。
