做法:春笋切成片后加少许盐捞出后(hòu )用清水浸泡,生(shēng )姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉(ròu )片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖(gài )焖(mèn )。
