做法:春笋切成片后(hòu )加少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加(jiā )入少量清水(shuǐ )半掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
