做法:春笋(sǔn )切(qiē )成(chéng )片后加(jiā )少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左(zuǒ )右。再(zài )加入生抽(chōu )、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大(dà )火煮(zhǔ )开(kāi )后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
