做法:春笋(sǔn )切成(chéng )片后加(jiā )少许(xǔ )盐捞出(chū )后用清水浸泡(pào ),生姜切(qiē )片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干(gàn )的时(shí )候加入盐,翻炒均(jun1 )匀稍收汁时盖(gài )上锅盖焖。
