做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大(dà )火(huǒ )煮开后转中(zhōng )火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
