做法:春笋切成(chéng )片后加少许(xǔ )盐(yán )捞(lāo )出后(hòu )用清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍(shāo )收(shōu )汁时(shí )盖上(shàng )锅盖焖。
