做法:春(chūn )笋切成(chéng )片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻(fān )炒1分(fèn )钟左右。再(zài )加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均(jun1 )匀稍收(shōu )汁时盖上(shàng )锅盖焖。
