做(zuò )法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧(shāo )热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分(fèn )钟左右。再加入(rù )生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
