做法:春笋(sǔn )切成片(piàn )后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分(fèn )钟左(zuǒ )右。再加(jiā )入生(shēng )抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
