做法:春笋切成片后加少许盐(yán )捞出(chū )后用清水(shuǐ )浸(jìn )泡,生(shēng )姜切片(piàn ),葱切成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
