做法:春(chūn )笋切成片后加少许(xǔ )盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水(shuǐ )快熬干的(de )时(shí )候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
