做法:春笋切成片后加(jiā )少许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快(kuài )熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上锅盖焖(mèn )。
