做(zuò )法:春笋切(qiē )成片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量(liàng )清水半(bàn )掩住春(chūn )笋(sǔn ),盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快(kuài )熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
